Agar

Agar is a galactose sulfate polymer obtained from red seaweeds like Gracilaria and Gelidium and forms heat-stable, strong gels at concentrations less than 0.5%. The gel forms at 90°F and melts at 190°F, showing a high hysteresis lag.

This unique property of Agar facilitates the processing of gelled cosmetic products. Traditional agar requires boiling at 100°C (212°F), while a new type of agar, subjected to special processing conditions, can be hydrated at 82°C (180°F).

Combined with other hydrocolloids, Agar can yield unique textural properties, and various gelling and melting points.
